Rotskos. If I remember correctly, he was in Polichni until a few years ago, and has now moved east. Of course, you should go, but based on the videos and audio clips I’ve happened to see (yes, I follow the posts of a great many instrument makers), my personal, subjective opinion is that you won’t find what you’re looking for. Everything I’ve seen and heard has been more geared towards stage bouzoukia, whereas, if I understood you correctly, you’re looking for a teké bouzouki. Honestly, make the effort to drop by Dellios as well (he’s somewhere in the city centre). Here’s a video with a guy pretending to be a journalist who visited his workshop: https://www.youtube.com/watch?v=suSTmySRT9U&list=RDsuSTmySRT9U&start_radio=1&pp=ygUlzpTOrc67zrvOuc6_z4Igzr_Pgc6zzrHOvc6_z4DOv865z4zPgqAHAQ%3D%3D
I think Dellios is closer to what you’re looking for than Rotskos (Xyloichos). Papadamos is also more likely to satisfy you than Xyloichos.
